  • 2 cups Spinach Fresh
  • 1 cup Ricotta Cheese Creamy
  • 1 cup Parmesan Cheese Grated
  • 2 tbsp Olive Oil For sautéing
  • 1 lemon Juice Freshly squeezed
  • 1/4 cup Toasted Pine Nuts
  • 2 cloves Garlic Minced
  • Salt To taste
  • Pepper To taste

Method
 

Cooking Instructions
  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.

  4. Add lemon juice, toasted pine nuts, salt, and pepper, and stir to combine.
  5. Drain the pasta and reserve some pasta water. Combine pasta with the spinach mix, adding reserved water as needed for creaminess.
  6. Serve immediately, garnished with additional pine nuts and parmesan if desired.
