- Boil a large pot of salted water over medium-high heat. Cook macaroni pasta until al dente, about 7–9 minutes. Drain and rinse with cool water.
- Chop egg whites and mash yolks separately. Add chopped whites to pasta.
- Add chopped red onion, celery, green onion, and bacon to the pasta bowl. Stir gently to combine.
- In a separate bowl, whisk together mayonnaise, mustard, vinegar, and garlic until smooth.
- Fold the dressing into the pasta until well-coated. Adjust salt and pepper to taste.
- Transfer to a serving dish and sprinkle paprika on top. Chill or serve immediately.
