Cooking Steps
  1. In a medium saucepan, pour in 2 cups of milk and place it over medium heat. Stir occasionally until the milk reaches a gentle simmer, with tiny bubbles forming at the edges, which should take about 5-7 minutes.
  2. Once the milk is simmering, carefully add in 1 cup of rolled oats, a pinch of salt, and 1 teaspoon of cinnamon. Increase the heat slightly to bring the mixture to a boil, then reduce the heat to low and let it simmer for about 5 minutes.
  3. In a separate bowl, whisk together 2 eggs, 2 tablespoons of maple syrup or honey, and 1 teaspoon of vanilla extract until smooth.
  4. Take about ½ cup of the hot oat mixture and slowly whisk it into the egg mixture to temper the eggs.
  5. Gradually pour the tempered egg mixture back into the saucepan with the simmering oats, stirring continuously.
  6. Continue to cook the combined mixture on low heat for an additional 5-7 minutes, stirring frequently until it thickens.
  7. If desired, stir in 1 tablespoon of butter or coconut oil until fully melted.
