Cooking Steps
- In a medium saucepan, pour in 2 cups of milk and place it over medium heat. Stir occasionally until the milk reaches a gentle simmer, with tiny bubbles forming at the edges, which should take about 5-7 minutes.
- Once the milk is simmering, carefully add in 1 cup of rolled oats, a pinch of salt, and 1 teaspoon of cinnamon. Increase the heat slightly to bring the mixture to a boil, then reduce the heat to low and let it simmer for about 5 minutes.
- In a separate bowl, whisk together 2 eggs, 2 tablespoons of maple syrup or honey, and 1 teaspoon of vanilla extract until smooth.
- Take about ½ cup of the hot oat mixture and slowly whisk it into the egg mixture to temper the eggs.
- Gradually pour the tempered egg mixture back into the saucepan with the simmering oats, stirring continuously.
- Continue to cook the combined mixture on low heat for an additional 5-7 minutes, stirring frequently until it thickens.
- If desired, stir in 1 tablespoon of butter or coconut oil until fully melted.
- Carefully spoon the Custard Oatmeal into warm bowls and add your favorite toppings.
