Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and position the oven rack in the center.
  2. Season the chicken breasts with salt and pepper. In a skillet, heat oil and sear the chicken for 5 minutes on each side.
  3. Shred the chicken into bite-sized pieces after cooling slightly.
  4. Sauté onions in the same skillet for 10 minutes until soft, then add garlic for another minute.
  5. Stir in rice and cook for 1 minute.
  6. Combine the rice mixture with chicken broth and mushroom soup in a baking dish.
  7. Cover tightly with foil and bake for 1 hour.
  8. Layer shredded chicken on top, cover again, and bake for an additional 10 minutes.
  9. Remove foil, add cheese, and broil for 1-2 minutes until golden.
  10. Garnish with parsley and serve.
