  • 8 oz Fresh Spinach thawed and squeezed dry frozen spinach can also be used
  • 2 tbsp Olive Oil extra virgin adds flavor
  • 3 cloves Minced Garlic fresh garlic is more aromatic
  • 1 tbsp Italian Seasoning feel free to swap in your favorite herbs
  • 1 tsp Salt adjust according to your taste
  • 1 tsp Black Pepper adjust according to your taste
  • 2 cups Shredded Mozzarella Cheese cheddar can also be used for a twist
  • 1/2 cup Parmesan Cheese optional for added depth of flavor
  • 1 tbsp Butter/Cooking Spray for greasing the baking dish

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease your baking dish.
  2. Slice the chicken breasts horizontally into thinner cutlets for even cooking.
  3. Marinate the chicken with olive oil, minced garlic, Italian seasoning, salt, and black pepper for 15-30 minutes.
  4. Sauté the spinach in a skillet with a splash of olive oil for 2-3 minutes until wilted.
  5. Beat the cream cheese until smooth, then fold in sautéed spinach and half of the mozzarella cheese.
  6. Optionally, sear the marinated chicken for 1-2 minutes on each side until golden-brown.
  7. Layer the chicken cutlets in the baking dish and spread the creamy spinach mixture over them.
  8. Top with the remaining mozzarella cheese and bake for 20-30 minutes until the chicken is fully cooked and cheese is bubbly.
  9. Let the casserole cool for about 5 minutes before serving.
