Ingredients
  

For the Filling
  • 4 fillets Salmon fresh or thawed if frozen
  • 8 ounces Boursin Cheese can substitute with cream cheese
  • 8 ounces Crab Meat fresh or canned, can substitute with shredded chicken
  • 8 ounces Shrimp peeled and deveined
  • 1 cup Spinach squeezed of excess moisture
  • 3 cloves Garlic minced
  • 1/2 cup Parmesan Cheese optional but recommended
  • 1 piece Jalapeno diced, adjust to taste
For Seasoning
  • 2 tablespoons Olive Oil to drizzle over salmon
  • to taste Salt to season
  • to taste Pepper to season
  • to taste Smoked Paprika to enhance flavor
  • to taste Cajun Seasoning to enhance flavor
Optional Topping
  • 2 pieces Lemon Wedges to serve with

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Drizzle 1 tablespoon of olive oil over each salmon fillet, rub it in and season with salt, pepper, smoked paprika, and Cajun seasoning.
  3. Create a slit in the center of each salmon fillet without cutting all the way through.
  4. In a mixing bowl, combine spinach, Boursin cheese, diced jalapeno, lump crab meat, Parmesan cheese, and minced garlic. Mix thoroughly and season with salt and pepper.
  5. In another bowl, season shrimp with remaining olive oil and seasonings, mixing until coated.
  6. Stuff each salmon slit with the crab mixture, then top with the seasoned shrimp, and optionally pour melted butter over them.
  7. Bake the stuffed salmon on the prepared sheet for 15-17 minutes until opaque and flaky.
  8. Serve hot with fresh lemon wedges.
