Preparation
- Rinse and soak legumes for at least 30 minutes. Finely chop parsley, cilantro, and mint.
Cooking
- In a large pot, combine soaked legumes, vegetable broth, minced garlic, and turmeric. Bring to a boil and simmer for 20-25 minutes.
- Stir in noodles and cook according to package instructions, about 7-10 minutes.
- Add finely chopped herbs just before serving and simmer for an additional 2-3 minutes.
- Ladle into bowls and top with yogurt before serving.
