  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Nutmeg ground
  • 1/2 cup Buttermilk can substitute with yogurt or milk mixed with vinegar
  • 1 cup Sweetened Flaked Coconut or unsweetened
  • 1/2 cup Macadamia Nuts chopped
  • 2 large Firm Ripe Bananas for garnishing

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two loaf pans with parchment paper.
  2. In a large bowl, beat together the eggs, both sugars, canola oil, and vanilla extract until smooth. Fold in the mashed bananas.
  3. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and nutmeg.
  4. Gradually add the dry mixture to the wet mixture, stirring gently. Incorporate the buttermilk.
  5. Fold in the sweetened flaked coconut and pour the batter into prepared pans.
  6. Top with sliced bananas and macadamia nuts, then bake for about 1 hour until golden brown.
  7. Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
