Step‑by‑Step Instructions for Chicken Caprese
  1. Prepare the chicken breasts by pounding them to an even thickness of about ½ inch between parchment paper.
  2. Mix Italian seasoning, sea salt, garlic powder, onion powder, and cracked black pepper in a bowl. Brush olive oil on each chicken breast and coat evenly with the seasoning mixture.
  3. Preheat the grill over high heat until hot. Test by sprinkling water; if it evaporates quickly, the grill is ready.
  4. Grill the seasoned chicken breasts for 5-6 minutes per side or until they reach an internal temperature of 155°F.
  5. Place slices of fresh mozzarella on top of each grilled breast and cover the grill to melt the cheese, about 2-4 minutes.
