  • 2 medium Bell Peppers any color or zucchini as alternative
  • 1 can Diced Tomatoes with Green Chilies opt for no-salt-added varieties
  • 1 tbsp Olive Oil or Avocado Oil
  • 2 tbsp Low-Carb Taco Seasoning homemade blends can be used
  • 1/2 cup Water or Beef Broth broth enhances flavor
For the Creamy Layer
  • 8 oz Cream Cheese can use Neufchâtel for lower fat
  • 1 cup Sour Cream or Greek yogurt as substitution
  • 1/2 cup Heavy Cream optional
  • 1 tsp Garlic Powder or fresh minced garlic
  • 1 tsp Onion Powder can substitute with more fresh onion
  • to taste Salt and Pepper essential for seasoning
For the Topping
  • 2 cups Shredded Cheese Cheddar/Monterey Jack; use dairy-free for vegan

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat olive oil over medium-high, then brown your ground beef (or turkey/chicken) for about 7-10 minutes.
  3. Add the chopped onions and bell peppers to the skillet and sauté for 5-7 minutes until softened.
  4. Stir in the diced tomatoes with green chilies and water or beef broth; bring to a simmer and cook for 5-10 minutes.
  5. In a mixing bowl, combine cream cheese, sour cream, heavy cream (if using), garlic powder, and onion powder until smooth.
  6. Fold two-thirds of the creamy mixture into the meat and vegetable blend, then spread it in the baking dish.
  7. Dollop and spread the remaining creamy mixture over the meat layer.
  8. Sprinkle shredded cheese over the top and bake in the oven for 25-30 minutes until bubbly and golden brown.
  9. Let the casserole cool for 5-10 minutes before serving and enjoy!
  10. Store any leftovers in an airtight container in the fridge for up to 3-4 days.
