  • 3 pieces Baking Potatoes russet or Yukon gold recommended
  • 2 cups Vegetable Oil for frying
  • 1 tablespoon Kosher Salt to taste
  • 1 teaspoon Coarse Ground Black Pepper freshly ground
For the Toppings
  • 1 cup Shredded Cheddar Cheese can substitute with Monterey Jack
  • 4 slices Cooked Bacon or substitute with turkey or plant-based bacon

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Wash and dry the baking potatoes.
  2. Slice each potato in half lengthwise, then cut into three wedges.
  3. Heat vegetable oil in a large skillet to 350°F (175°C). Fry the potato wedges in batches for about 4-5 minutes until golden brown.
  4. Season the fried wedges with kosher salt and black pepper. Arrange them on a baking sheet.
  5. Sprinkle shredded cheddar cheese evenly over the wedges and half of the crumbled bacon.
  6. Bake in the oven for about 15 minutes until cheese is melted and bubbly.
  7. Add the remaining crumbled bacon and bake for an additional 5 minutes.
  8. Serve hot with your favorite dips like ranch or spicy ketchup.
