  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Wood or metal skewers if using wooden skewers, soak in water for 30 minutes

Method
 

  1. In a large bowl, combine olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, black pepper, cumin, and paprika. Whisk until well combined.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or up to overnight for best flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, thread the marinated lamb onto the skewers.
  4. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  5. Remove from the grill and let rest for 5 minutes before serving.
