  • 1/2 cup low-sodium chicken broth vegetable broth is excellent for a vegetarian option
For the Gnocchi
  • 1 package fresh gnocchi consider gluten-free brands if necessary
  • 1 cup cherry tomatoes can substitute with diced tomatoes if necessary
For the Creamy Finish
  • 1 cup fresh mozzarella vegan cheese can be used
  • 1 cup small fresh basil leaves dried basil can be used in smaller amounts

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 5-6 minutes per side until golden-brown.
  3. Transfer the skillet to the oven and bake the chicken for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  4. Remove the chicken and set aside. Return the skillet to medium heat, and sauté chopped shallot and minced garlic for 2-3 minutes.
  5. Add ½ cup of dry white wine to the skillet, scrape browned bits, then stir in canned tomato sauce and ½ cup of chicken broth. Simmer for 5 minutes.
  6. Stir in the fresh gnocchi and halved cherry tomatoes, cooking until the gnocchi float and tomatoes soften, about 1-2 minutes.
  7. Fold in 1 cup of diced mozzarella and basil leaves. Drizzle with balsamic glaze, if desired, before serving.
