  2. With a sharp knife, score the dome side of each chestnut to prevent bursting while roasting.
  3. Heat a large skillet over medium heat and add the avocado oil. Pour in the rock sugar and stir until it dissolves.
  4. Quickly add the scored chestnuts to the pan, stirring them with the hot oil and sugar for 2-3 minutes.
  5. Pour in enough water to just cover the chestnuts, then cover the skillet with a lid and simmer for 25 minutes.
  6. After 25 minutes, remove the lid, stir the chestnuts, and cook until the liquid evaporates, about 5-7 minutes.
