- With a sharp knife, score the dome side of each chestnut to prevent bursting while roasting.
- Heat a large skillet over medium heat and add the avocado oil. Pour in the rock sugar and stir until it dissolves.
- Quickly add the scored chestnuts to the pan, stirring them with the hot oil and sugar for 2-3 minutes.
- Pour in enough water to just cover the chestnuts, then cover the skillet with a lid and simmer for 25 minutes.
- After 25 minutes, remove the lid, stir the chestnuts, and cook until the liquid evaporates, about 5-7 minutes.
