Preparation Steps
- Preheat your oven to 350°F (177°C) and line an 8x8-inch baking pan with foil.
- In a medium mixing bowl, combine melted unsalted butter, granulated sugar, vanilla extract, salt, and lemon zest. Gradually mix in all-purpose flour.
- Reserve ¾ cup of the crust mixture for topping and press the remaining mixture into the bottom of the pan. Bake for 18 minutes.
- Beat the cream cheese in a large bowl until smooth. Add sugar and lemon zest, incorporating eggs, yogurt or sour cream, salt, and flour until blended.
- Gently fold in fresh blueberries. Pour the cream cheese mixture over the crust and sprinkle reserved crust on top.
- Bake for 55-60 minutes until center jiggles slightly. Cool at room temperature for 30 minutes, then refrigerate for at least one hour.
