  • 2 large Eggs
  • 1/2 cup Yogurt or Sour Cream Greek yogurt adds protein and a thicker texture.
  • 1 cup Fresh or Frozen Blueberries If using frozen, do not thaw.
For Topping
  • 3/4 cup Reserved Crust Mixture Be sure to measure it correctly for the best texture.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (177°C) and line an 8x8-inch baking pan with foil.
  2. In a medium mixing bowl, combine melted unsalted butter, granulated sugar, vanilla extract, salt, and lemon zest. Gradually mix in all-purpose flour.
  3. Reserve ¾ cup of the crust mixture for topping and press the remaining mixture into the bottom of the pan. Bake for 18 minutes.
  4. Beat the cream cheese in a large bowl until smooth. Add sugar and lemon zest, incorporating eggs, yogurt or sour cream, salt, and flour until blended.
  5. Gently fold in fresh blueberries. Pour the cream cheese mixture over the crust and sprinkle reserved crust on top.
  6. Bake for 55-60 minutes until center jiggles slightly. Cool at room temperature for 30 minutes, then refrigerate for at least one hour.
