  • 1 teaspoon Vanilla Extract Pure vanilla is best.
  • 1 cup Almond Milk Substitute with your favorite dairy or plant-based milk.
For the Blueberry Topping
  • 1 cup Blueberries Fresh or frozen, just mash frozen ones beforehand.

Equipment

  • Mixing Bowl
  • Whisk
  • Measuring Cups
  • glass jars

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine the whole rolled oats, chia seeds, cream cheese, Greek yogurt, maple syrup, almond milk, and vanilla extract. Whisk together until smooth, ensuring there are no lumps of cream cheese remaining. Let the mixture sit for 5-10 minutes at room temperature to thicken slightly.
  2. If using frozen blueberries, place them in a small bowl and let them thaw for a few minutes. Mash the blueberries gently with a fork until they resemble a jam-like consistency.
  3. Distribute the thickened oat mixture evenly into five glass jars, filling each jar to about three-quarters full. Spoon the mashed blueberries on top of the oats.
  4. Seal the jars with their lids and place them in the refrigerator. Allow the oats to chill and soak for at least 4 hours, preferably overnight.
  5. When ready to enjoy, remove the jars from the refrigerator. You can eat them cold or microwave each jar for about 30 seconds.
