Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the salmon fillets on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
While the salmon is baking, prepare the apple vinaigrette. In a medium bowl, combine the diced apple, red onion, apple cider vinegar, honey, Dijon mustard, 1/4 cup olive oil, garlic powder, black pepper, and salt. Stir well to combine.
Once the salmon is done, remove it from the oven and let it rest for a few minutes.
Serve the salmon topped with the apple vinaigrette and garnish with fresh parsley.
