Ingredients
  

  • 2 6-ounce salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 apple cored and diced (preferably a sweet variety like Fuji or Honeycrisp)
  • 1/4 cup red onion finely chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
  3. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  4. While the salmon is baking, prepare the apple vinaigrette. In a medium bowl, combine the diced apple, red onion, apple cider vinegar, honey, Dijon mustard, 1/4 cup olive oil, garlic powder, black pepper, and salt. Stir well to combine.
  5. Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  6. Serve the salmon topped with the apple vinaigrette and garnish with fresh parsley.
