  • 1.32 pounds Boneless Chicken Thighs Substitute with boneless chicken breast if preferred.
  • 2 tbsp Finely Chopped Garlic Garlic powder is a substitute.
  • 2 tbsp Lemon Juice Use fresh lemon juice for best flavor.
  • 1 tsp Black Peppercorns Ground black pepper is a suitable substitute.
  • ¾ cup Extra Virgin Olive Oil Avocado oil is a mild alternative.
  • 2 tbsp Paprika Sweet or smoked paprika can be used.
  • 2.5 tbsp Dried Rosemary Dried thyme is a substitute.
  • 2.5 tbsp Whole Coriander Seeds Ground coriander can be used.
  • 2.5 tbsp Red Chili Flakes Adjust according to spice tolerance.
  • Coarse Sea Salt Kosher salt is an alternative.
  • ½ large Onion Can substitute with a sturdy potato.
  • 1 Bamboo Skewer Ensure it's long enough for all the meat.
Tzatziki Sauce
  • 1 cup Greek Yogurt Regular yogurt can be used for a lighter dip.
  • ½ medium Cucumber Grated and squeezed to remove excess moisture.
  • 1 tbsp Fresh Dill Mint can be substituted for a unique twist.
  • 1 clove Garlic Minced, optional for a milder taste.
  • 1 tbsp Lemon Juice Fresh lemon juice is ideal.
  • Salt Use to taste, keep minimum if watching sodium.

Method
 

Preparation
  1. Begin by placing your boneless chicken thighs between plastic wrap and gently pound them to a uniform thickness of about ½ inch.
  2. In a mortar and pestle, combine the spices and grind until fine, then mix with garlic, olive oil, and lemon juice.
  3. Coat the chicken thighs thoroughly with the marinade and refrigerate for at least 2 hours, ideally overnight.
  4. Prepare the rotisserie by inserting a bamboo skewer through half of a large onion.
  5. Skewer the marinated chicken pieces tightly around for even cooking.
  6. Preheat your oven to 375°F (190°C) and bake the chicken for about 1 hour.
  7. Let the chicken cool for a few minutes, then shave off the outer layers of meat.
