Ingredients
  

  • 1 pound fresh asparagus trimmed
  • 1 bunch radishes halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons white miso paste
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame seeds

Method
 

  1. Preheat the oven to 400°F.
  2. On a baking sheet, toss the asparagus and radishes with olive oil, salt, and pepper.
  3. Roast in the oven for 15-20 minutes, or until tender and slightly caramelized.
  4. While the vegetables are roasting, prepare the dressing by whisking together the miso paste, sesame oil, rice vinegar, honey (or maple syrup), soy sauce, and sesame seeds in a small bowl until smooth.
  5. Once the vegetables are done roasting, remove them from the oven and let them cool slightly.
  6. Drizzle the sesame miso dressing over the warm vegetables and toss gently to combine.
  7. Serve immediately or let it chill in the refrigerator for about 15 minutes for a refreshing cold dish.
