Ingredients

For the Muffins
  • 1 lb Ground Turkey Use 93% lean for moisture and flavor.
  • 1 Apple Peeled and grated; can substitute with Honeycrisp or Fuji.
  • 1/2 cup Breadcrumbs Opt for gluten-free breadcrumbs to keep it gluten-free.
  • 1 Egg Acts as a binder; can replace with a flax egg for a vegan alternative.
  • 1/2 Onion Finely diced; shallots can be a milder substitute.
  • 1/2 tsp Dried Sage Fresh sage can be used—just increase to taste.
  • Salt & Pepper Essential seasoning; adjust according to your taste.
For the Glaze
  • 1 tbsp Dijon Mustard Adds a tangy flavor to the glaze.
  • 1 tbsp Maple Syrup Provides sweetness for the glaze; honey or agave can be used.
Optional Side
  • Mashed Sweet Potatoes A comforting side; substitute with regular mashed potatoes or parsnips if desired.

Equipment

  • Muffin tin
  • Mixing Bowl
  • Whisk

Method

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and generously grease a muffin tin with avocado oil spray.
  2. In a large mixing bowl, combine ground turkey, grated apple, breadcrumbs, the egg, diced onion, sage, salt, and pepper. Mix until just combined.
  3. Divide the turkey mixture evenly among 8-10 muffin cups, pressing lightly to fill each cup.
  4. In a small bowl, whisk together the maple syrup and Dijon mustard to create a flavorful glaze. Brush this glaze generously over the tops of each muffin.
  5. Place the muffin tin in the preheated oven and bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F.
  6. Once baked, remove the muffin tin from the oven and allow the muffins to rest for about 5 minutes before serving.
