  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the shredded rotisserie chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for about 5 minutes, until heated through.
  2. While the chicken is heating, warm the tortillas in a separate skillet or microwave until soft and pliable.
  3. To assemble the tacos, place a generous scoop of the seasoned chicken on each tortilla.
  4. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  5. Add a dollop of sour cream and a spoonful of salsa on top.
  6. Garnish with fresh cilantro if desired. Serve immediately.
