- 2 cups cooked chicken, shredded
- 1 cup queso dip
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced jalapeños (optional)
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- In a medium saucepan, heat the shredded chicken over medium heat until warmed through. Stir in the queso dip until well combined and heated. Season with salt and pepper to taste.
- While the chicken and queso mixture is heating, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- To assemble the tacos, place a generous scoop of the queso chicken mixture in the center of each tortilla.
- Top with shredded lettuce, diced tomatoes, red onion, and jalapeños if using.
- Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
