Nutty Bliss Almond Date Energy Bites are a healthy and delicious snack made with wholesome ingredients, perfect for a quick energy boost.


Ingredients

  • 1 cup pitted Medjool dates, packed
  • 1 cup raw almonds
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. In a food processor, combine the pitted dates and raw almonds. Pulse until they are finely chopped and start to clump together.
  2. Add the rolled oats, almond butter, shredded coconut, vanilla extract, sea salt, and cinnamon (if using) to the food processor. Pulse until the mixture is well combined and sticky.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. If the mixture is too sticky, dampen your hands slightly to make rolling easier.
  4. Place the energy bites on a parchment-lined baking sheet or plate. Once all the mixture is rolled, refrigerate the bites for at least 30 minutes to firm up.
  5. Store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the mixture or roll the bites in cocoa powder before refrigerating.
  • Substitute walnuts or cashews for the almonds for a different flavor profile, or mix in some chia seeds or flaxseeds for added nutrition.
