- 1 cup pitted Medjool dates, packed
- 1 cup raw almonds
- 1/2 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 teaspoon cinnamon (optional)
Instructions
- In a food processor, combine the pitted dates and raw almonds. Pulse until they are finely chopped and start to clump together.
- Add the rolled oats, almond butter, shredded coconut, vanilla extract, sea salt, and cinnamon (if using) to the food processor. Pulse until the mixture is well combined and sticky.
- Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. If the mixture is too sticky, dampen your hands slightly to make rolling easier.
- Place the energy bites on a parchment-lined baking sheet or plate. Once all the mixture is rolled, refrigerate the bites for at least 30 minutes to firm up.
- Store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the mixture or roll the bites in cocoa powder before refrigerating.
- Substitute walnuts or cashews for the almonds for a different flavor profile, or mix in some chia seeds or flaxseeds for added nutrition.
