- 2 tablespoons olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces uncooked egg noodles
- 1 cup shredded cheddar cheese
- 1 cup cottage cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
- Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for about 10 minutes, allowing the flavors to meld.
- Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine the cooked noodles, beef mixture, cheddar cheese, cottage cheese, and half of the Parmesan cheese. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the beef mixture.
- For a vegetarian option, substitute the ground beef with 1 can (15 ounces) of black beans and add extra vegetables like bell peppers and zucchini.
