Ingredients

  • 1 head of butter or romaine lettuce, leaves separated
  • 1 cup shredded carrots
  • 1 cup diced cucumber
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1/2 cup Greek yogurt (for sauce)
  • 1 tablespoon lime juice (for sauce)
  • 1 tablespoon honey (for sauce)
  • 1/4 cup chopped fresh cilantro (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. In a medium bowl, combine shrimp, olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat the shrimp evenly.
  2. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside.
  3. In a small bowl, whisk together Greek yogurt, lime juice, honey, cilantro, salt, and pepper to create the cilantro lime sauce.
  4. To assemble the wraps, take a lettuce leaf and fill it with a few shrimp, shredded carrots, diced cucumber, and avocado slices. Drizzle with cilantro lime sauce and sprinkle with additional cilantro if desired.
