Ingredients

  • 2 pounds carrots, peeled and sliced into rounds
  • 1/2 cup raisins
  • 1/4 cup honey
  • 1/4 cup unsalted butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot, bring water to a boil. Add the sliced carrots and cook for about 5 minutes until slightly tender. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Add the cooked carrots, raisins, honey, cinnamon, salt, and black pepper.
  3. Stir to combine all ingredients, then add the water. Cover the pot and simmer for about 10-15 minutes, stirring occasionally, until the carrots are tender and the mixture is slightly thickened.
  4. Remove from heat and let it sit for a few minutes to cool slightly.
  5. Serve warm, garnished with chopped fresh parsley if desired.

Notes

  • For a nutty flavor, add 1/4 cup of chopped walnuts or pecans during the last few minutes of cooking.
  • Substitute maple syrup for honey for a different sweet flavor profile.
