A delicious side dish featuring sweet carrots cooked with raisins and honey, perfect for any meal.
Ingredients

- 2 pounds carrots, peeled and sliced into rounds
- 1/2 cup raisins
- 1/4 cup honey
- 1/4 cup unsalted butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- Chopped fresh parsley for garnish (optional)
Instructions
- In a large pot, bring water to a boil. Add the sliced carrots and cook for about 5 minutes until slightly tender. Drain and set aside.
- In the same pot, melt the butter over medium heat. Add the cooked carrots, raisins, honey, cinnamon, salt, and black pepper.
- Stir to combine all ingredients, then add the water. Cover the pot and simmer for about 10-15 minutes, stirring occasionally, until the carrots are tender and the mixture is slightly thickened.
- Remove from heat and let it sit for a few minutes to cool slightly.
- Serve warm, garnished with chopped fresh parsley if desired.
Notes
- For a nutty flavor, add 1/4 cup of chopped walnuts or pecans during the last few minutes of cooking.
- Substitute maple syrup for honey for a different sweet flavor profile.
