- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter and granulated sugar until smooth and well blended.
- Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until fully combined.
- If using, gently fold in the chocolate chips.
- Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with a fork, creating a crisscross pattern on top.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Add a sprinkle of sea salt on top before baking for an extra flavor boost.
