Description

Savory Meatloaf Cupcakes with Cheesy Mashed Potato Frosting are a delicious twist on traditional meatloaf, served in a fun cupcake form and topped with creamy mashed potatoes.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese
  • 4 large potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk (for mashed potatoes)
  • 1/2 teaspoon garlic powder (for mashed potatoes)
  • Salt and pepper to taste (for mashed potatoes)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, egg, garlic powder, salt, black pepper, oregano, and thyme. Mix until well combined.
  3. Divide the meat mixture evenly among the muffin cups, filling each about 2/3 full.
  4. Bake in the preheated oven for 20-25 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
  5. While the meatloaf cupcakes are baking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, salt, and pepper. Mash until smooth and creamy.
  7. Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly. Top each cupcake with a generous dollop of cheesy mashed potatoes and sprinkle with shredded cheddar cheese.
  8. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the meat mixture.
  • Substitute ground turkey or chicken for a leaner option, and use low-fat cheese for a lighter version.
