- 1/2 cup tahini
- 1/4 cup honey or maple syrup
- 1/2 cup pomegranate seeds
- 1 cup rolled oats
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional)
Instructions
- In a large mixing bowl, combine the almond butter, tahini, honey (or maple syrup), vanilla extract, and salt. Mix until smooth and well combined.
- Stir in the rolled oats and pomegranate seeds until evenly distributed. If using, add the shredded coconut and mix well.
- Refrigerate the mixture for about 30 minutes to firm up, making it easier to handle.
- Once chilled, use your hands to form small balls (about 1 inch in diameter) from the mixture. Place the balls on a parchment-lined baking sheet.
- Return the baking sheet to the refrigerator for another 15-20 minutes to set.
- Store the bites in an airtight container in the refrigerator for up to one week.
Notes
- For a chocolatey twist, add 1/4 cup of mini chocolate chips to the mixture before forming the bites.
- Substitute the pomegranate seeds with dried cranberries or raisins for a different flavor profile.
