- 2 ripe bananas
- 1 cup creamy peanut butter
- 1 cup rolled oats
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips (optional)
Instructions
- Peel the bananas and slice them into 1/2-inch thick rounds.
- In a mixing bowl, combine the peanut butter, honey, vanilla extract, and salt. Stir until smooth and well blended.
- Add the rolled oats to the peanut butter mixture and mix until fully combined. If using, fold in the mini chocolate chips.
- Take a banana slice, scoop about a teaspoon of the peanut butter mixture on top, and place another banana slice on top to create a sandwich. Repeat until all banana slices are used.
- Place the assembled banana bites on a parchment-lined baking sheet.
- Freeze the bites for at least 1 hour or until firm.
- Once frozen, transfer the bites to an airtight container and store in the freezer for up to 2 months.
