Description
A quick and delicious one-pan meal featuring chicken and broccoli, perfect for busy weeknights.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups broccoli florets
- 1 cup low-sodium chicken broth
- 1 cup cooked rice (white or brown)
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes (optional)
- ¼ cup grated Parmesan cheese (optional)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add the broccoli florets to the skillet and pour in the chicken broth. Bring to a simmer, cover, and cook for about 5 minutes, or until the broccoli is tender.
- Stir in the cooked rice, soy sauce, lemon juice, and red pepper flakes (if using). Mix well and cook for an additional 2-3 minutes until everything is heated through.
- If desired, sprinkle with grated Parmesan cheese before serving.
Notes
- For added flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking.
- You can substitute the broccoli with other vegetables like bell peppers or snap peas for variety.
