Description

A delicious and easy recipe for Lemon Garlic Chicken Meatballs served over orzo pasta, perfect for a weeknight dinner.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, egg, lemon zest, salt, pepper, and oregano. Mix until just combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Drizzle the meatballs with olive oil and bake for 20-25 minutes, or until cooked through and golden brown.
  5. While the meatballs are baking, bring chicken broth to a boil in a medium saucepan.
  6. Add orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain any excess liquid.
  7. Once the meatballs are done, remove them from the oven and toss them in a bowl with lemon juice.
  8. Serve the meatballs over the orzo, garnished with additional parsley if desired.

Notes

  • For a lighter version, substitute ground turkey for the ground chicken.
  • For added flavor, mix in some chopped spinach or kale into the meatball mixture.
