- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup uncooked long-grain white rice
- 1 1/2 cups chicken broth
- 1 cup honey BBQ sauce
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and black pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in the uncooked rice, chicken broth, honey BBQ sauce, frozen mixed vegetables, garlic powder, and onion powder. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
- Remove the skillet from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes or a dash of hot sauce to the BBQ sauce.
- Substitute the chicken thighs with chicken breasts or even tofu for a vegetarian option. Adjust cooking times accordingly.
