  • 4 medium potatoes, diced (about 4 cups)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the diced potatoes, beef broth, Worcestershire sauce, paprika, oregano, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
  5. If using, sprinkle the shredded cheddar cheese on top during the last 5 minutes of cooking, allowing it to melt.
  6. Once cooked, remove from heat and garnish with fresh parsley if desired. Serve warm.
