- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Mix in the diced sweet potatoes and bell pepper, followed by the paprika, cumin, salt, and pepper. Stir well to combine.
- Pour in the chicken broth, cover the skillet, and let it simmer for about 10 minutes, or until the sweet potatoes are tender.
- Transfer the mixture to a greased 9×13-inch baking dish. If using, sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For added flavor, consider adding a teaspoon of chili powder or a splash of hot sauce to the turkey mixture.
- You can substitute ground turkey with ground chicken or lean beef for a different taste.
