Description

A comforting and delicious Golden Chicken and Mushroom Pie, perfect for family dinners.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups frozen peas
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 package (17.3 ounces) frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the chicken pieces to the skillet and cook until browned and cooked through, about 6-8 minutes.
  5. Add the sliced mushrooms and cook for another 3-4 minutes until they are soft.
  6. Pour in the chicken broth and heavy cream, then stir in the thyme, salt, and pepper. Bring the mixture to a simmer and let it cook for about 5 minutes until slightly thickened.
  7. Stir in the frozen peas and cook for another 2 minutes. If using, add the chopped parsley and mix well. Remove from heat and let cool slightly.
  8. Roll out the thawed puff pastry on a lightly floured surface. Cut it into two large pieces to fit your pie dish.
  9. Pour the chicken and mushroom filling into a pie dish and cover with one piece of puff pastry. Trim any excess pastry and crimp the edges to seal. Cut a few slits in the top to allow steam to escape.
  10. Brush the top with the beaten egg for a golden finish.
  11. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.
  12. Allow to cool for a few minutes before serving.

Notes

  • For a healthier option, substitute half-and-half for heavy cream.
