Ingredients

  • 2 cups Bisquick mix
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for strawberries)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 425°F (220°C). Grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the Bisquick mix, granulated sugar, and baking powder. Mix well.
  3. Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix.
  4. Drop the dough by large spoonfuls onto the prepared baking sheet, forming about 8 shortcakes.
  5. Bake for 12-15 minutes or until the tops are golden brown. Remove from the oven and let cool slightly.
  6. While the shortcakes are baking, prepare the strawberries. In a medium bowl, toss the sliced strawberries with 2 tablespoons of granulated sugar. Set aside to macerate for about 10-15 minutes.
  7. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. To assemble, slice the shortcakes in half horizontally. Layer the bottom half with strawberries and a generous dollop of whipped cream. Top with the other half of the shortcake and add more strawberries and whipped cream on top.

Notes

  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
  • Add a splash of lemon juice to the strawberries for an extra zing.
  • For a fun twist, try adding a layer of chocolate sauce between the strawberries and whipped cream.
