A delicious and creamy pasta salad that combines the flavors of a classic club sandwich with rotini pasta.

- 8 ounces rotini pasta
- 1 cup cooked chicken, diced
- 4 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooked pasta, diced chicken, crumbled bacon, cherry tomatoes, chopped romaine, and shredded cheddar cheese.
- In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a good stir and adjust seasoning if necessary.
Notes
- For a lighter version, substitute Greek yogurt for sour cream and use turkey bacon instead of regular bacon.
- You can also add diced avocado or cucumber for extra freshness.
