A delightful and creamy slow cooker French toast bake infused with cinnamon, perfect for breakfast or brunch.

- 6 cups cubed day-old bread (such as French or Italian)
- 8 large eggs
- 2 cups milk
- 1 cup heavy cream
- 1 cup brown sugar, packed
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped pecans or walnuts (optional)
- 1/2 cup raisins or dried cranberries (optional)
- Powdered sugar for serving (optional)
Instructions
- Grease the inside of your slow cooker with cooking spray or butter.
- In a large mixing bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, and salt until well combined.
- Add the cubed bread to the egg mixture and gently fold until all the bread is coated. If using, fold in the chopped nuts and dried fruit.
- Pour the bread mixture into the prepared slow cooker, spreading it evenly.
- Cover and cook on low for 4 to 5 hours, or until the center is set and the edges are golden brown.
- Once cooked, turn off the slow cooker and let the French toast bake sit for about 10 minutes before serving.
- Serve warm, dusted with powdered sugar if desired.
Notes
- For a richer flavor, substitute half of the milk with eggnog during the holiday season.
- Add a splash of maple syrup to the egg mixture for an extra layer of sweetness.
