Chilled Asian Chicken Pasta Salad with Ginger Hoisin Dressing delights with fresh flavors!
Ingredients

- 8 ounces of rotini pasta
- 2 cups of cooked, shredded chicken breast
- 1 cup of snap peas, trimmed and halved
- 1 red bell pepper, thinly sliced
- 1 cup of shredded carrots
- 1/2 cup of green onions, sliced
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of hoisin sauce
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame oil
- 1 teaspoon of freshly grated ginger
- 1 teaspoon of minced garlic
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large bowl, combine the cooked pasta, shredded chicken, snap peas, red bell pepper, shredded carrots, green onions, and cilantro.
- In a separate bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, ginger, and garlic until well combined. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional cilantro if desired.
Notes
- For a vegetarian option, substitute the chicken with tofu or edamame.
- Add a sprinkle of sesame seeds on top before serving for added crunch and flavor.
