Description

Chilled Asian Chicken Pasta Salad with Ginger Hoisin Dressing delights with fresh flavors!


Ingredients

Scale
  • 8 ounces of rotini pasta
  • 2 cups of cooked, shredded chicken breast
  • 1 cup of snap peas, trimmed and halved
  • 1 red bell pepper, thinly sliced
  • 1 cup of shredded carrots
  • 1/2 cup of green onions, sliced
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of hoisin sauce
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 teaspoon of freshly grated ginger
  • 1 teaspoon of minced garlic
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large bowl, combine the cooked pasta, shredded chicken, snap peas, red bell pepper, shredded carrots, green onions, and cilantro.
  3. In a separate bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, ginger, and garlic until well combined. Season with salt and pepper to taste.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled, garnished with additional cilantro if desired.

Notes

  • For a vegetarian option, substitute the chicken with tofu or edamame.
  • Add a sprinkle of sesame seeds on top before serving for added crunch and flavor.
