- 2 cups cooked chicken, shredded or diced
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 package (6 ounces) stuffing mix
- 1 ½ cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, and black pepper. Mix until well combined.
- In another bowl, combine the stuffing mix with the chicken broth and melted butter. Stir until the stuffing is evenly moistened.
- Spread the chicken mixture evenly in a greased 9×13-inch baking dish. Top with the stuffing mixture, spreading it out evenly over the chicken.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the stuffing is golden brown and the casserole is heated through.
- Let the casserole cool for about 5 minutes before serving.
Notes
- For a creamier texture, add an additional ½ cup of sour cream.
- You can substitute the mixed vegetables with your favorite veggies, such as broccoli or green beans.
- For a crunchy topping, sprinkle some crushed crackers or fried onions on top during the last 10 minutes of baking.
