A comforting and delicious Cheesy Chicken and Stuffing Casserole that combines tender chicken, creamy soup, and savory stuffing.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 package (6 ounces) stuffing mix
  • 1 ½ cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, and black pepper. Mix until well combined.
  3. In another bowl, combine the stuffing mix with the chicken broth and melted butter. Stir until the stuffing is evenly moistened.
  4. Spread the chicken mixture evenly in a greased 9×13-inch baking dish. Top with the stuffing mixture, spreading it out evenly over the chicken.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the stuffing is golden brown and the casserole is heated through.
  6. Let the casserole cool for about 5 minutes before serving.

Notes

  • For a creamier texture, add an additional ½ cup of sour cream.
  • You can substitute the mixed vegetables with your favorite veggies, such as broccoli or green beans.
  • For a crunchy topping, sprinkle some crushed crackers or fried onions on top during the last 10 minutes of baking.
