Description
A delicious and refreshing BLT Pasta Salad that combines the classic flavors of a BLT sandwich with pasta for a perfect side dish or light meal.

- 8 ounces rotini pasta
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, romaine lettuce, and shredded cheddar cheese.
- In a separate small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional bacon or cheese if desired.
Notes
- For a lighter version, substitute Greek yogurt for the mayonnaise and sour cream.
- Add diced avocado or sliced green onions for extra flavor and texture.
