- 3–4 lbs whole chicken, cleaned and patted dry
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
- 4 cloves garlic, smashed
- 1 onion, quartered
- Fresh herbs (such as rosemary or parsley) for garnish
Instructions
- Preheat your oven to 425°F.
- In a small bowl, mix together the paprika, garlic powder, onion powder, cumin, coriander, thyme, salt, and black pepper.
- Rub the olive oil all over the chicken, then generously sprinkle the spice blend over the chicken, making sure to coat it evenly.
- Stuff the cavity of the chicken with the lemon halves, smashed garlic, and quartered onion.
- Place the chicken breast-side up in a roasting pan or on a baking sheet.
- Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the juices run clear.
- Let the chicken rest for 10-15 minutes before carving.
- Garnish with fresh herbs before serving.
Notes
- For a crispy skin, broil the chicken for the last 5 minutes of cooking.
- You can substitute the spices with your favorite seasoning blend or add a pinch of cayenne for extra heat.
