Ingredients

  • 34 lbs whole chicken, cleaned and patted dry
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • 1 onion, quartered
  • Fresh herbs (such as rosemary or parsley) for garnish

Instructions

  1. Preheat your oven to 425°F.
  2. In a small bowl, mix together the paprika, garlic powder, onion powder, cumin, coriander, thyme, salt, and black pepper.
  3. Rub the olive oil all over the chicken, then generously sprinkle the spice blend over the chicken, making sure to coat it evenly.
  4. Stuff the cavity of the chicken with the lemon halves, smashed garlic, and quartered onion.
  5. Place the chicken breast-side up in a roasting pan or on a baking sheet.
  6. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F and the juices run clear.
  7. Let the chicken rest for 10-15 minutes before carving.
  8. Garnish with fresh herbs before serving.

Notes

  • For a crispy skin, broil the chicken for the last 5 minutes of cooking.
