Description

Aromatic Chicken Bhuna with Tomatoes and Spices is a flavorful and easy-to-make dish that combines tender chicken with a rich blend of spices and tomatoes.


Ingredients

  • 2 pounds chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1/2 cup water

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
  2. Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until aromatic.
  4. Add the diced tomatoes and tomato paste, cooking until the tomatoes break down and the mixture thickens, about 5 minutes.
  5. Sprinkle in the coriander powder, turmeric powder, garam masala, red chili powder, and salt. Stir well to combine all the spices with the tomato mixture.
  6. Add the chicken pieces to the skillet, stirring to coat them in the spice mixture. Cook for about 5 minutes, allowing the chicken to brown slightly.
  7. Pour in the water, bring to a simmer, and cover the skillet. Reduce the heat to low and let it cook for 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender.
  8. Taste and adjust seasoning if necessary. If you prefer a thicker sauce, uncover and cook for an additional 5-10 minutes.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a creamier sauce, stir in 1/4 cup of coconut milk during the last 5 minutes of cooking.
  • Serve with steamed basmati rice or warm naan for a complete meal.
  • Adjust the level of spiciness by increasing or decreasing the red chili powder.
